Hoji Cha is a style of Japanese Green Tea that is roasted over charcoal, rather than steamed, and then fired at a high temperature. This process changes the leaves’ color from green to red-brown. The roasting process brings out toasty, mild, sweet caramel flavors. Like its un-roasted sibling, Kuki Cha, it contains some twigs and stems, which add a rich note to the tea.
